
Busy lives can mean it’s hard to find time to make healthy and filling meals that the whole family can enjoy. This pitta pizza recipe is super easy to follow and comes in at under £1 per serving, too.

Ingredients
- 6 wholemeal pitta breads
- 250g red, yellow or green peppers sliced
- 175g tomato purée
- 200g closed cup white mushrooms, brushed clean and sliced
- 125g medium cheddar, grated
- 100g drained tinned sweetcorn
- 170g cherry tomatoes, quartered
Method
1: Preheat your oven to 200°C/gas mark 6.
2: Halve the pitta breads horizontally and put them on a large baking tray. Spread tomato purée over the pitta halves, then top with the mushrooms, cheddar, sweetcorn, tomatoes and peppers. Why not get creative and make faces out of the toppings?
3: Cook in the oven for 10-12 minutes, until the cheese is melted and bubbling. Serve two pitta halves per person.
